Sunday Salsa

Being that I am on this warm weather kick, I am going to keep the momentum going, and this time the transition is happening in the kitchen with my Mango Salsa.  I know I can make this any time of the year really, but it’s best in the summer, and brings back great memories.  I keep it very simple, diced mangoes, chopped red bell pepper, cilantro, a jalapeno pepper, and a green onion.  Throw in a tablespoon of lemon juice and lime juice and voila!  You have yourself some delicious, summery, mango salsa.
